Today has seen some very dreary weather here in Usk, which has in turn has nudged me into considering my forth coming seasons menu. The appearance of local venison, oxtail and oysters are at the front of my mind. The team and i will also introduce one of my favorite vegetables to the menu, curly kale. As a youngster in the country I used to grow it with my father, now it is being haled as a super food and is being linked with fighting disease, and preventing diabetes.

Well, with the end of a fantastic and busy weekend, I am pleased to say that this week sees the return of our painters and decorators, Mike and Dai. Tomorrow they will be starting work on both rooms 6 and 7. With all the colour schemes chosen, and the furniture already ordered, I am excited to see the finished results.

Another busy night last night with both of our function rooms booked out for a 50th Wedding Anniversary as well as a private dinner. The newly refurbished function rooms looked fantastic all set up for the two dinners, and with another Celebration in the Lantern room tonight, I’m looking forward to a good weekend.

Evening all, The favourable weather conditions of the last few weeks have seen a flourish in our kitchen garden, and we are now beginning to reap a good crop of runner beans and a some good sized beetroot, which we will be smoking and serving for Sunday lunch. See you there.

Evening all,
The last two days have seen not only a growth spurt in the kitchen garden but a massive revamp of the kitchen itself.
New equipment being delivered and installed and the re-siteing of the existing appliances.
All in all a very productive week so far.

Evening all
Once again its been a lovely sunny day here in Usk, and the kitchen garden has again had attention from my brigade of chefs. More land preparation has taken place.
The runner beans are now coming up to finger length, and beetroots may make their first apperance on the menu this Sunday.

Evening all, after yet another glorious day in Usk, I have been to water the kitchen garden and noticed the runner beans are flowering well, and the beetroots are beginning to swell, so looking forward to a good harvest for the restaurant.

Afternoon all
It’s been a quiet week here at the Hotel this week without all the builders and decorators in. Finally we have finished the refurbishment of rooms 9 and 10, both the function suites and the function bar, as well as the main reception. They have done a fantastic job and all is looking good.
